Busy Nights Real Food

  A week to look forward to
Well, not really. Its actually shaping up a long week. I am working tonight so I had to make some good food to eat for lunch. Black bean burritos hit the spot and were a super fast meal. Simply take a can of black beans (I like to drain and rinse mine), some salsa, chili powder, cayenne pepper and cumin. I nuked it all for about 5 minutes and then served on whole wheat tortillas. Pretty low guilt level which is good for me this time of year.

I have tomorrow off of work so I hope to make something really good. My busy nights lately have resulted in a lot of easy no brainers (like last night's Honey and Mustard breaded chicken). I have done alright with making real food most nights, though take out has been my down fall. Hopefully as I get used to this new schedule I will be able to better plan my menus.

Thursday is our supper club and I am looking forward to that. The theme is Favorite Festive Foods. Though my all-time favorite holiday dish is the cheesy hashbrown thing, I am going to go a little fancier and make a wild rice stuffing. It is super yummy and acutally pretty easy to throw together.

Saturday night is a Christmas party at my best friend's house so I may try to make something really simple to contribute.

So hopefully I will finally have something new to post soon.

The black bean burritos sound good. I make mine with a can of kidney beans , rinsed, then mixed with some enchalada sauce or tomatos. Then I sort of mash it with my potato masher and nuke it. It's hard to come up with fast easy meals sometimes, isn't it.
